Dining Room in The Lodge at Echo Lake Ranch Resort

The big meals were midday. Ranch style chicken on Wednesdays and Sundays. Thursday lunch was corned beef, cabbage and potatoes. Friday was fish. The cook, known as "Joe," was a heavy drinker but never missed preparing three meals a day, all summer long. After the evening meal, tables and chairs were moved to make room for dancing.
